Gemere (Ginger Beer) is a classic drink that Batswana, people from Botswana, love. It is a slightly fermented drink that is usually served at gatherings such as family reunions, celebrations and weddings. Gemere is considered non alcoholic but if one desires to give it a little kick one could add their choice of alcohol to spice it up.
Ginger beer originates from the Colonial - Oriental spice trade. It became very popular with the British and British colonies and now it is becoming more popular world wide as Ginger beer production has began to increase.
Everyone has their own special recipe when making Ginger beer. On my maternal side of my family they prefer using raisins, apple and fresh pineapple while on my paternal side they prefer to garnish with tinned pineapple.
The Recipe(large gathering)
Ingredients
water
sugar
50-55g ground ginger
14g tartaric acid
14g cream of tartar
1 queen pineapple, peeled and sliced
Optional (Mint/ 1 apple/1 orange/fresh ginger)
9kg liquid container (sealable)
Instructions
1. boil water in a small-medium sized pot, add 50-55g of ground ginger and continue to stir for a few minuets.
2. leave to cool.
3. When mixture is lukewarm pour into the 9kg container and fill with cold water .
4. Add sugar till satisfied with taste. Add tartaric acid and cream of tartar. Add pineapple
5. keep sealed overnight.
6. Straining is optional.
7. Chill and serve in mini jars/ bottles

Alternative recipes that use fresh Ginger or the traditional ginger, yeast and sugar combinations are also available online. But locally ground ginger is the popular ingredient.
Caution: When fermenting make sure that the drink is in a airtight container
